How to cook liver burgers from chicken liver

Chicken offal is widely used in almost all national cuisines. Considered to be very popular liver. Not only does it prepare very quickly, within five to seven minutes, it is also quite useful for the human body. No wonder she prescribed doctors in the diet with great fatigue, to restore vitality.

This product is often used to prepare pies, burgers, snacks, main dishes and even soups. It is perfectly amenable to various types of heat treatment: frying, stewing and boiling.

The simplest thing that can be made from the liver is to fry it with onions in sour cream sauce. More complex dishes are meatballs, the recipes of which are a great many: with oatmeal, with semolina, with vegetables, in breading and without it.

Experienced chefs advise that it is necessary to soak the chicken liver in milk so that it does not taste bitter.

Chicken liver burgers: a step-by-step recipe

One of the advantages of this by-product is its low cost. Having spent a minimum of money, you can prepare a full-fledged lunch or dinner - not only delicious, but also healthy.

Composition:

  • offal - 400 g;
  • egg - 1 pc .;
  • Onion - 1 pc .;
  • oil - 2 tbsp. l .;
  • flour - 3 tbsp. l .;
  • salt - a pinch.

Preparation: 25 minutes.

Energy value: 127 Kcal / 100 g

Peel the onion, chop into large cubes. You can add more carrots, but this is optional. The liver is washed repeatedly under water to remove as much blood as possible.

Lay on a towel to dry. Immerse in the tank and grind it into a porridge mass using an immersion blender.

Next send the bow. If you do not have a blender, you can do all this in a conventional or electric meat grinder.

We drive an egg into the ready mass, pour flour, salt and mix everything thoroughly. Pour the oil into a saucepan, warm it up, spreading the liver dough with a spoon and fry small burgers.

Since the dough is liquid, one spoon is enough for each, otherwise the mass will spread through the pan and one large pancake will turn out. If you do not have flour on hand, you can replace it with any starch.

Do not overdo liver patties on the fire - they will turn out to be dry. For normal roasting it is enough to hold one minute on each side.

How to cook liver burgers from chicken liver with oatmeal

Making a more dietary dish of chicken offal is very simple; instead of flour, oatmeal can be used as a basis. Thus its caloric content is significantly reduced and useful elements are added.

Composition:

  • liver - 300 g;
  • Oatmeal - 4 tbsp. l .;
  • egg - 1 pc .;
  • vegetable oil - 3 tbsp. l .;
  • salt - pinch;
  • carrots - 1 pc.

Preparation: 45 minutes.

Energy value: 146 Kcal / 100 g

Rinse the liver carefully and trim the tendons. If you have time, soak for an hour in milk. Clean the carrots, wash them and chop them into rings. Grind the oatmeal in a coffee grinder, so the stuffing will be more uniform.

Twist the soaked liver together with the carrots in the grinder. In the stuffing, beat the egg and add the oatmeal with salt. Mix everything and let stand for twenty minutes to swell the dough.

Spread semi-finished products on the heated vegetable oil, do it carefully, so as not to get burned. Using a fork, turn the patty on the second side after two minutes.

Put the ready-made liver patties from chicken liver with oatmeal on a paper towel, then send it to a saucepan or go straight to the dish to the table.

You can add onion, garlic and black pepper in the mince, but this is optional.

Liver cutlets from chicken liver with semolina

Quite original is the chicken liver dish. Groats give greater satiety and density of minced meat, in combination in it the burgers turn out very soft and tender.

Composition:

  • liver - 500 g;
  • onions - 1 pc .;
  • semolina - 0.5 cups;
  • salt, pepper - pinch;
  • oil - 50 ml.

Preparation: 35 minutes.

Energy value: 152 Kcal / 100 g

We wash the by-product under a stream of cold water, place it in the blender bowl and smash together with pieces of chopped onion into a homogeneous mass. If necessary, keep the device turned on a little longer, so as not to catch whole pieces.

The blender can be replaced with an ordinary manual meat grinder, but in this case you need to skip the products twice.

We drive an egg into liquid liver dough, add pepper, salt, knead everything thoroughly and add semolina in small batches to prevent lumps. Let stand for fifteen minutes and proceed to frying in heated sunflower oil.

When a beautiful brownish peel appears, spread it on a flat dish. It can be decorated with green leaves of lettuce. So it will be more appetizing and solemn, because liver patties can be not only an everyday dish.

Useful tips

  1. To make the liver patties juicier, roast them in a small amount of boiled water after frying.
  2. If the stuffing is too liquid, add a little cereal: manna, buckwheat, oatmeal or flour.
  3. Ready-made liver patties from chicken liver can be frozen in the freezer. In this form, they can be stored for a long time, then they can simply be heated in a microwave or in a pan.
  4. Mince liver goes well with zucchini, cabbage, eggplants and pumpkin.
  5. The color of a good chicken liver should be brown with burgundy tint.
  6. Chicken liver can be included in the child’s diet starting from a year.
  7. Store chilled byproduct chilled by about two days. Otherwise, it is better to freeze it.
  8. If the liver has a loose, non-elastic structure, most likely it will taste bitter. It needs to be soaked.
