How to quickly bake a cake with frozen berries

Almost every housewife has a reminder of the hot summer of berries in the form of frozen berries, hidden in the depths of the freezer. But even if there is no such pre-form in the refrigerator, practically in every supermarket one can buy relatively cheap various frozen fruits and berries in which useful substances are stored in sufficient quantity.

Of these fruits, you can make tasty, juicy and flavorful cakes, the recipes of which exist quite a lot - for every taste (yeast, puff, from shortbread or sponge dough).

Step by step recipe

Yeast pie with frozen berries in the oven is a more satisfying pastry compared to products from other types of dough. In addition, it is stored longer. It is convenient to give a piece of such a pie to the school for a snack for a child, and not just to drink tea with him during family gatherings.

For yeast dough and topping of frozen berries, you will need:

  • 60 ml of drinking water;
  • 10 g dry instant yeast;
  • 250 grams of sugar;
  • 2 chicken eggs;
  • 60 ml of sour cream;
  • 60 ml of sunflower oil;
  • 290 g of flour;
  • 300 g of frozen berries;
  • 50 g of starch.

Cooking time is approximately 2 hours.

Caloric content - 253.6 kcal / 100 g.

Baking Algorithm:

  1. In lukewarm water, dissolve the yeast with 30 g of granulated sugar and forget about it for a while;
  2. In a separate bowl, beat 90 g of sugar with one chicken egg and sour cream, then pour the yeast foam, which is formed from the yeast dissolved in water, into the mixture;
  3. After that, pour flour into the dough and knead the soft dough, which should fit from 20 to 40 minutes;
  4. For the filling, mix the thawed berries with starch and the remaining sugar;
  5. Roll out the dough in two layers. One lay out the form for the future cake, put the berry filling on it;
  6. In the second layer of dough, cut round holes with a glass, forming a beautiful lattice, then cover them with stuffing, pinch the edges. From the scraps of dough, you can make additional decor;
  7. Lubricate the surface of the cake with a beaten egg and send to the oven for 30-40 minutes, until a beautiful golden color. Oven temperature - 180-200 degrees Celsius.

Sandy cake with frozen berries

Crumbly shortbread dough goes well with a juicy berry filling. In addition, such pastries are an easy and fast way to please your beloved household. For the proposed version of the open sand cake, you can use absolutely any berries that lie in the freezer with warm pores.

For shortbread dough and berry filling it is necessary to prepare:

  • 5 chicken eggs;
  • 270 g of sugar (120 of them for dough);
  • 160 g butter or margarine for baking;
  • 350 g of flour;
  • 450 g of frozen berries;
  • vanilla to taste (if only cherry is used for the filling, you can take cinnamon).

It will take about 50 minutes to bake the cake, without taking into account the time required for the berries to thaw.

The nutritional and energy value of this type of berry dessert at the level of 249.7 kcal / 100 g.

Working process:

  1. Split chicken eggs into yolks and whites. The first will be used for the test, the second - for filling;
  2. Grind the yolks well with the required amount of sugar. No need to achieve a lush foam, it will be enough if all the grains just dissolve;
  3. Chop soft butter with a knife (or use a blender) with flour into a crumb. Then gently pour the yolks with sugar and knead the elastic dough;

For a puff pie with frozen berries you need to take:

  • 500 g of ready (preferably yeast) puff pastry;
  • 500 g of frozen berries;
  • 200 grams of sugar;
  • 40 g of flour;
  • 20 g of starch.

If you defrost the berries before cooking, then in just 40 minutes you can create an aromatic berry dessert.

In a piece of cake weighing 100 grams, depending on the type of berries taken for the filling, will be 235.3 kilocalories.

How to bake:

  1. The first thing you need to defrost the berries. It is better to do this by pouring them into a colander so that excess moisture can immediately drain. If there is any doubt about the purity of the fruit, it is better to rinse them under running cold water;
  2. The puff pastry should be allowed to lie down for 10 minutes at room temperature in order to make it more elastic, but you should not overexpose it either;
  3. Spray the cake pan with flour. Roll out half of the dough into the formation (not thinner than 5 mm) and lay out the bottom and walls of the mold with it;
  4. Mix thawed berries with sugar and starch, lay out the basis of the dough;

The order of work:

  1. Beat one egg with sugar until all the grains are dissolved. Then pour in milk and vegetable oil, stir to make the mixture more homogeneous. In the resulting mixture, sift the flour with baking powder. Knead everything and the dough is ready.
  2. For the curd layer in the blender bowl (food processor), combine the egg, cottage cheese, half the total amount of starch and the remaining sugar. Kill the mass until smooth;
