Oat pancakes on kefir

Appetizing oat pancakes on kefir with a unique taste are ideal for a hearty breakfast or a quick snack.

When choosing oatmeal for the recipe, give preference from sprouted oats or whole grains. Also, as an option it can be done at home. To do this, grind the oatmeal using a food processor or coffee grinder.

Take yogurt on pancakes from 1.5% or best of all homemade, because the more fat, the tastier.

Ingredients:

  • Kefir 2.5% - 500 ml
  • Egg - 1 pc.
  • Oatmeal - 100 gr.
  • Wheat flour - 170 gr.
  • Baking Powder - 2 tsp.
  • Sugar - 3 tbsp. l
  • Vegetable oil - 40 ml

Cooking:

  1. Prepare the necessary ingredients.
  2. Pour the kefir into a deep bowl, break the egg into it and add sugar. Honey, jam, syrup, sweetener can replace sugar.
  3. Beat the mixture until fluffy with a whisk or mixer, then add baking powder. Soda can replace baking powder. Just before adding it to the egg mass, quench it with apple cider vinegar or lemon juice.
  4. Mix well with a whisk so that no lumps form and add sifted oatmeal and wheat flour. If you want to make fritters darker, then on the contrary, add more oatmeal. In some recipes of similar pancakes, along with wheat cereal, ordinary oatmeal is added, the structure of the finished pancakes will change slightly, but it will not affect the taste.
  5. Then mix again and knead the dough on the pancakes. Leave it for 5-7 minutes, it will become thicker and will look like thick cream. Such a dough can be stored in the refrigerator for 2-3 hours.
  6. On a pre-hot pan with vegetable oil, put a little dough in the form of pancakes with a spoon. Butter or coconut oil can replace vegetable. Also, you can give them any other shape, such as a heart. To do this, you need a special mold, you can use the one that is used for cutting cookies.
  7. Fry on both sides for 3-4 minutes. So cook the rest of the dough.

Put ready-made oat pancakes on plates and serve. Before serving, if desired, decorate them with various berries, fruits, nuts, chopped chocolate, whipped cream, honey, condensed milk, coconut flakes or peanut butter.

Of course, they are more delicious hot. But if you do not eat right away, then cover with a plate or foil, so they will keep warm longer.

Together with them, put sour cream, sweet syrups, jam or jam on the table. And from drinks, make tea, hot chocolate or cocoa with marshmallows.
