A fresh tongue does not have extraneous smells, there must be an elastic surface, and if the consistency is soft, after pressing with a finger it restores the structure for a long time, this also indicates a repeated defrosting.

To prepare a delicious salad, it is not necessary to use a chilled product - salted or smoked beef tongue will fit (it all depends on the recipe). But if you use fresh ingredient, before cooking it must be boiled for three hours in salt water. After that, the skin must be removed, finely chopped, add other ingredients, cheese.   • 300 grams of beef;
  • 100 g of ham;
  • 50 g of anchovies;

  • 3 boiled potatoes in their uniform;
  • 4 boiled eggs;
  • 2 pickled cucumbers;
  • 2 boiled carrots;
  • 1 can of canned peas;
  • 4 tbsp. mayonnaise.

Crush the prepared products into cubes, mix, season, salt and season with mayonnaise.

Some additionally add onions to this salad, but it should be pre-marinated: cut into small cubes, pour over the mixture of vinegar and boiling water, leave for 5 minutes. True onion is advisable to add only if you plan to eat a snack on the day of cooking - if the salad stays in the fridge for several days, it will start to taste bitter.
