To make potato pancakes tasty, keep their shape well, you need to follow a few simple conditions:

  • Potatoes must be starchy varieties, by no means young. So the finished potato pancakes will not be razlazitsya.
  • Older, large tubers are also not suitable for the dish - there is little starch in them. To check the suitability of potatoes, you need to make a cut and look at it: if droplets of unclear juice were made on the potatoes, then such potatoes are great in composition of starch for pancakes.
  • Immediately after cleaning the potatoes, removing the "eyes", you can not immerse them in cold water, as we often do. This procedure will remove the starch, which is so necessary for the right consistency.

Potatoes prepared - we can proceed to the preparation of the dish:

  1. Rinse peeled potatoes under cool water.

  3. Rub the grated potatoes and squeeze the flesh to drain the excess liquid. You do not need to squeeze out the juice too much, it will be enough just to pour the juice from the bowl.
  4. Peel the onions and rub them on the same grater as the potatoes. This procedure is not pleasant, but onions perfectly complements the taste of potatoes in this dish.
  5. We shift the potato pulp into a deep container, mix it with onions and season with salt and pepper.
  6. Add to the potato and onion egg mass, mix well.
