  • 300 ml of pure drinking water (preferably soft, without impurities);
  • 5 g dry or 8 g pressed live yeast;
  • 650 grams of white, twice sifted meal of hard wheat varieties;
  • 30 ml of olive oil;
  • 1 tsp. rock salt;
  • 2 tbsp. l plain sugar.

Sunflower oil can be used instead of olive oil, but it is undesirable. And ideally, the oil take the first spin, without fragrances. So the pizza dough becomes obedient, elastic.

The correct batch is one of the secrets of making real pizza. First, dissolve the yeast in warm water. Add some sugar and flour. Stir well and leave to rest for 10 minutes.

As soon as the yeast begins to play, pour flour into the dough with parts and conjure over the dough. “Conjure” is the right word, because you only need to knead the pizza dough with your hands, putting the soul into the process. Work continues for at least 8 minutes. At the end add olive oil and knead for 10 minutes.

The yeast dough, after kneading, is placed in heat, covering the bowl with a towel. Ideally, it should rest for a few hours. Although this rule in the home nobody fulfills. However, it is still necessary to start baking only after 1.5 hours.

The dough is crushed to get rid of the smell of yeast and proceed to the formation of cakes. For ordinary baking using a rolling pin. But not the case with pizza.

The basis for this dish is made only with your hands, stretching and smoothing the dough in shape and thickness with your palms. The thinner the cake is, the better, more evenly and faster it will be baked. The classic version of the base is a circle with a diameter of 30-35 cm. Thickness - 3 mm in area and 1 cm along the rim.

Bake the dish at a maximum temperature (250-275 degrees) for no longer than 20 minutes. If you overdo the pizza in the oven, the dough with the filling will burn. It is undesirable to lower the temperature of the baking - the base around the edges will be fried, but in the center it will remain wet, undercooked.

  • 3-4 cloves of garlic;
  • 4 tbsp. l light mayonnaise;
  • 80 g of hard cheese;
  • 2-4 sprigs of parsley;
