Simple recipes for baked shank in beer

For the holiday table you always want to cook something unusual. One of the delicious, hearty dishes - cooked knuckle in beer, which is so fond of the Germans and Czechs. Moreover, cooking pork is not as difficult as it may seem at first glance. In our article we will analyze the most popular recipes and share tips that will help prepare this dish just like eminent chefs.

Pork knuckle in Bavarian beer - the most famous recipe

Cooking time: 180 minutes.

Calories per 100 g: 332 kcal.

To prepare this dish, we will need ingredients such as:

  • 2 liters of dark beer;
  • knuckle;
  • 1 carrot;
  • 1 onion;
  • 7 pieces carnations;
  • 1 tsp cumin, allspice;
  • 1 tbsp. salts;
  • 3 bay leaves;

You also need to cook and icing:

  • 2 tbsp honey and mustard;
  • 2 tbsp. beer broth (it will boil meat);
  • salt and pepper to taste.

The most difficult thing to do is to find the right knuckle.

So, we will need an average knuckle weighing about 1500 kg, it is desirable that it had less fat, and more meat - in this case the dish will turn out even tastier (it all depends on your taste preferences).

Next you need to find a suitable container for cooking. If you find the remains of pig hair on the knuckle, you should set them on a lighter (a characteristic smell may remain from matches), put a piece of pork in the pan.

It is better to boil it in dark beer, because in this case the taste will be more saturated.

Fill the beer so that it completely covers the steering wheel, and set it on the stove for maximum fire.

While the main ingredient is being prepared, we prepare everything else: clean and chop the carrots and onions (and the pieces should be large), put everything to the knuckle, add seasonings and salt.

We leave to cook for an average of 1.5 hours, but after this time it is worth checking readiness.

After the meat is cooked, it should be set aside to cool. We proceed to the preparation of the glaze, which is necessary for the lubrication of the knuckle when baking in the oven.

We need to mix honey, mustard, broth, you can add a little garlic. When the meat has cooled, you need to rub it with spices, smear it with glaze, for which it is better to use a wide brush.

Preheat oven to +180 degrees, put the knuckle on the foil and send the meat to bake. It takes about 50-60 minutes. And there is a very important point: for the dish to be soft, you need to regularly grease the meat with icing.

After this time, you can get our shank: as a garnish, it is best to serve stewed cabbage, new potatoes, fried in garlic and rosemary.

Cooking shank in Czech

Cooking time: 150 minutes.

Calories per 100 g: 310 kcal.

In contrast to the shank in Bavarian, the meat will be more juicy. We need the following ingredients:

  • 1.5 kg of meat;
  • 1 head of garlic;
  • salt and spices to taste;
  • 100 ml of soy sauce;
  • 100 ml of beer (optional);
  • 1 tbsp. mustard;
  • 500 g cabbage;
  • 1 onion;
  • 1 tbsp. Ketchup or pasta.

In this recipe, the knuckle can be both cooked and cooked in the oven. But first of all it should be marinated.

Now proceed to cooking:

  1. Wash the product and scrape the skin, if you find hair, burn it with a lighter.
  2. Make small cuts on the skin, put the garlic in there, top with salt and pepper.
  3. Set aside the meat and take a side dish: take the required amount of sauerkraut, fry it, adding 1 tbsp. tomato paste. To add sourness to the dish, you need to add some cranberries.
  4. Make a gravy by combining soy sauce and mustard (beer). If there is honey at home, you can add 1 tsp, it will add spicy to the dish.
  5. Grease the meat with the sauce.
  6. Spread the cabbage on a baking sheet, place the knuckle on top.
  7. Preheat oven to +200 degrees, bake meat for two hours.

Spicy pork in beer with honey

Cooking time: 150 minutes.

Caloric content per 100 g: 280 kcal.

Another "delicious" recipe involves the use of a large amount of honey and mustard, with them the meat will be more piquant, unusual.

You will need products such as:

  • 1.3-1.5 kg of pork;
  • 1 tbsp. mustard and honey;
  • 10 cloves of garlic;
  • 1 carrot;
  • 200 ml of beer;
  • 1 onion;
  • pepper and salt to taste;
  • 2 tbsp. soy sauce.

Prepare the dish as follows:

  1. Meat should be thoroughly washed, put in a saucepan, add water and cook over low heat for 90 minutes. Be sure to remove the foam.
  2. Add carrot and onion, pepper, salt. Boil about 1 hour more.
  3. Remove the pork and cool it, make cuts on the skin and insert the garlic cloves there.
  4. Remove the baking dish, preferably with high sides, cover the bottom with foil so that you have free edges - we will wrap the meat with them. Put the knuckle on top.
  5. Prepare a dressing: mix honey, mustard, beer and soy sauce.
  6. Grease the pork sauce, wrap in foil and put in the oven.
  7. Set the temperature to 200 degrees, bake for an hour. 20 minutes before the readiness remove the foil to make a crust.

How to cook in a slow cooker

Cooking time: 200 minutes.

Calories per 100 g: 300 kcal.

To cook the knuckle in the slow cooker, we need ingredients such as:

  • 1.5 kg of pork;
  • 500 ml of dark beer;
  • spices and salt to taste;
  • 1 kg of potatoes;
  • mustard with garlic for marinade.

The preparation method is as follows:

  1. Fill the meat with hot boiled water and wait for the liquid to cool - should be comfortable hands.
  2. Peel the skin, rinse with water, and dry with a paper towel.
  3. Mix marinade products in a separate container.
  4. Cut the garlic into sharp pieces.
  5. Make a cut on the skin, insert the garlic in the slots.
  6. Grate the pickle with marinade, and do not feel sorry for the salt - with its lack the dish will be bland.
  7. Put the meat in a separate container, pour the beer and leave for three hours.
  8. After this, we expose the “Quenching” mode in the multicooker, put the knuckle in the bowl and leave for two hours, filling the beer broth.
  9. An hour later, we put the potatoes in the bowl.

Before you apply the knuckle, you need to cut it: cut large pieces of meat and lay them around the bone. If you like spicy food, additionally make garlic sauce for meat. Sprinkle meat with fresh herbs. Additionally, make a salad of fresh vegetables.

  1. If you first boil the pork, then bake it in the oven for 2 hours.
  2. If the meat is not previously cooked, but only pickled, then bake an average of about 2.5 hours.
  3. When you immediately decided to bake the knuckle, then for its full preparation should take at least 3.5 hours. However, it is worth noting that in this case it will be tough.
