What is the dish under the tempting name "Lyulya-kebab"? It is chopped meat mixed with greens and spices, formed into oblong tubules and roasted over coals (according to the traditional recipe) or otherwise.

Lyulya kebab is made from minced meat and differs from meatballs in that only meat, onions, greens and some types of spices are used in its preparation. Bread, milk, eggs, potatoes and other additives are not included in the mincemeat for cooking lyula-kebab.

How to cook chicken kebab on skewers on the grill:

  1. Wash the chicken and, after clearing the skin, disassemble, separating the meat from the bones. Remove the bones to the side (they can boil a delicious broth), and chop the meat into small pieces;
  2. Finely chop the onion and add to the meat. Grinding it with a meat grinder is not recommended - too much juice will stand out, which will prevent the meat from “sticking”;
  3. Wash cilantro and dill. Thoroughly shake off excess moisture and chop melenko. Send to meat;
  4. Add the minced salt, a mixture of peppers and a generous pinch of hops-suneli. Stir the stuffing thoroughly, and then forcefully beat the sides of the bowl or the table;
  5. Place the minced meat in the fridge for an hour, and at this time you can set about making a fire in the grill;
  6. After the allotted time, moisten hands with water and begin to form oblong sausages around the skewers. Watch the thickness of the prepared product - it should be no more than 3-3.5 cm. Otherwise, the product may burn or unevenly roast from the inside;
  7. Place skewers with shaped sausages over a brazier, over hot charcoals and fry quickly, turning the skewer (skewers) around its axis;
  8. Serve ready kebab with fresh vegetables, pickled onions and favorite sauce.

Chicken Lula Kebab Recipe in the Oven

If there are unsuitable conditions on the street, but you still want to cook flavored baked meat - it does not matter! If you have an oven, you can cook a meat dish perfectly, with the intriguing name "Lyulya-kebab", without leaving your home! The meat prepared according to this recipe is very tender, juicy and fragrant.

Ingredients:

  • chicken breast - 1 kg;
  • red onion - 100 g;
  • garlic - 2 cloves;
  • ground paprika - ½ tsp;
  • fresh cilantro - a few twigs;
  • table salt;
  • liquid smoke - 1 tsp;
  • ground pepper.

Cooking time: 1 hour

Cooking:

  1. Chop chicken breast (without bone). For this, together with peeled garlic cloves, it is necessary to skip through a meat grinder with a large grill;
