Choosing fruits

For the preparation of jam you need to use only young fruits: they must have a greenish peel, soft, with a slight wax coating. The core should be more like jelly. Usually nuts reach such maturity by the end of June.

In addition, the nuts must be even, without dents, any damage, because they need to be plucked directly from the tree. It is also recommended to choose products of the same size.

Dishes

Not all dishes suitable for making jam. For example, copper can not be used, because such containers will emit metal ions. Aluminum should not be used either: the acids contained in the composition will break the oxide film, due to which metal particles can get into the workpiece.

Next you need to prepare a lime solution. To do this, take 100 g of hydrated lime per 1 liter of water. After preparation of the solution, it must be left to infuse to form a precipitate.

The instruction is as follows:

  • we prick each fruit with a fork in several places;
  • soak the specified period;
  • cook nuts for 10 minutes;
  • drain the water, cool the nuts.
Using citric acidThe instruction is as follows:
  • fruits are peeled, pierced with a fork;
  • soaked for 7-10 days depending on the size of the nuts;
  • prepare a solution of 1 tsp. citric acid powder in 1.5 liters of water, pour raw materials;
  • boil for 20 minutes.
Using clovesStep by step recipe:
  • peeled fruits pierce;
  • in the holes lay the buds of cloves;
  • boil the raw material for 30 minutes, cool, washed.

 

Wear rubber gloves before cleaning and soaking. So hands will not turn brown. And before using, check the gloves for holes.

Next, proceed to cooking. Immediately it should be said that the occupation is quite tedious, long, in the process of preparation it is impossible to leave the house even for half an hour.

Armenian

For the preparation you will need:

  • 100 nuts (about 1.2 kg);
  • 1 kg of sugar;
  • 400 ml of water;
  • 2 lemons;
  • 10 pieces. carnations;
  • 10 g cinnamon.

Step by step preparation:

  • boil syrup out of water and sugar, stirring constantly, cool;
  • add seasoning to the syrup;
  • add soaked nuts to the mass;
  • squeeze juice from lemons;
  • bring to a simmer over low heat, turn off the stove and leave the mass for a day;
  • the next day, we boil the jam again, cool it, and do the same on the third day;
  • on the fourth day, boil the nuts until ready, take out the cloves.

How to determine if jam is ready? Here you need to periodically try a delicacy: the nuts should be softish, but at the same time keep the film. There should be no bitterness.

Bulgarian

Jam in this recipe is quite complicated and troublesome to prepare, but the result is worth it.

For cooking you need:

  • 1 kg of soaked nuts;
  • 1 kg of sugar;
  • 200 ml of water;
  • 10 g of citric acid.

Instruction:

  • prepare a solution of water and lemon juice, boil it;
  • immerse nuts soaked in advance for 5 minutes;
  • remove the nuts and immediately immersed in cold clean water;
  • repeat the action at least 5 times;
  • make syrup from water and sugar, boil nuts in it until cooked.

In Ukrainian

One of the easiest recipes. To make jam you need young green fruits.

Ingredients:

  • 1 kg of nuts;
  • 1.2 kg of sugar;
  • 1 lemon;
  • 10 pieces. carnations.

Making jam is simple:

  1. Young nuts are peeled, pierced, washed, immersed in clean water, brought to a boil and boiled for 20 minutes.
  2. Fruits shift in cold water to cool the nuts.
  3. In parallel, make a syrup using sugar, water, lemon juice and cloves.
  4. Immerse the cooled nuts in the liquid, boil for 5-7 minutes, then leave for an hour to cool the mass.
  5. Repeat the procedure three times, after which bring the jam to readiness.

To make jam you need:

  • 3 kg of quince;
  • 2.5 kg of sugar;
  • 1 cup walnut kernels;
  • 1.5 liters of water.

Cooking features:

  1. Quince wash, dry, remove the core, cut into quarters. And the cleaned parts should not be thrown out - they will still be useful, since they contain a lot of essential oils. It is on their basis that we will make syrup.
  2. Put the peel and hearts in the pan, add water, boil for 25 minutes. We shift the whole mass into a colander, filter. It is not necessary to pour syrup.
  3. Lay in a hot liquid chopped quince, cook on medium heat for about 10 minutes. The foam must be removed, then strain again.
  4. We pour the mass into the pan, pour the granulated sugar and boil for 5-6 minutes and insist for 10-12 hours, covering the vessel with a towel.
  5. After a specified time, boil the jam again, adding nuts. The total time is about 1 hour. Jam in the end should get dark amber and stingy.
