How to cook real soup kharcho at home

Perhaps, kharcho is one of those few soups that are familiar to everyone since childhood. Nourishing, rich, fragrant - this Georgian dish always pleases with its exquisite taste. According to tradition, kharcho is cooked using beef, however, at present there are a lot of variations for every taste. Today we will tell about the most interesting recipes for cooking kharcho.

Beef and Rice Kharcho Soup

Ingredients:

  • 300 grams of beef;
  • 3 tbsp. rice;
  • 3 tomatoes;
  • 1 onion;
  • 1 clove of garlic;
  • 1 tbsp. vegetable oil;
  • 2 liters of water;
  • 20 g parsley;
  • salt (to taste);
  • pepper-peas (to taste);
  • hot pepper (to taste)
  • hop-suneli seasoning (to taste);
  • bay leaf (to taste).

Cooking time - 130 minutes. Calories per 100 g - 103 kcal.

Cooking method:

  1. Wash a piece of beef, cut into small cubes.
  2. Put the meat in a saucepan filled with water and place on the stove. Bring to a boil, removing the foam.
  3. Boil for about 60-90 minutes. Next, strain and set aside the cooked meat pieces.
  4. Peel the onions and cut into small cubes. Fry in a pan with oil until golden brown.
  5. Transfer cooked beef to onions and lightly fry.
  6. Add a little broth and cook under the lid closed for about 10-15 minutes.
  7. To blanch the tomatoes and remove the skin. Cut into small cubes and shift to the pan. Continue extinguishing 10 minutes.
  8. Pour the prepared broth into a saucepan and put on the stove.
  9. After boiling, put the stew into the pan and cook for another 5 minutes.
  10. Then pour the rice, season with spices to your own taste (spice lovers can also sprinkle a little hot pepper).
  11. Toward the end of the preparation add chopped parsley and garlic. Kharcho is ready!

Hearty Pork Soup

Ingredients:

  • 400 g pork;
  • 2 potatoes (to taste);
  • 1 onion;
  • 4 cloves of garlic;
  • 2-3 tomatoes;
  • 70 grams of rice cereal;
  • 2 liters of water;
  • 5 tbsp. l sunflower oil;
  • salt (to taste);
  • hop-suneli seasoning (to taste);
  • chili pepper (to taste);
  • greens (to taste).

Cooking time - 70 minutes. Calories per 100 g - 55 kcal.

Cooking method:

  1. Wash meat, cut into pieces of medium size.
  2. Put the pork in a pot filled with water and place on the stove. Bring to a boil, sometimes removing the foam.
  3. Boil the broth for about 40 minutes.
  4. Peel the onions and cut them into small pieces.
  5. Peel the potatoes and cut into medium-sized sticks.
  6. Rinse the rice thoroughly.
  7. To boiled pork pour potatoes, rice groats and onions. Boil for 15-20 minutes.
  8. To blanch tomatoes, peel and cut into small cubes.
  9. Pour the vegetable oil into the pan and heat it on low heat. Transfer the tomatoes and simmer for 5-7 minutes, sometimes stirring.
  10. In a boiling dish add the stew and spices. Cook for 5 minutes.
  11. At the end of cooking add chopped greens and garlic.
  12. Cover the soup with a lid and let it brew for 20 minutes. The dish is ready!

Mutton Kharcho Soup

Ingredients:

  • 500 g lamb ribs;
  • 75 grams of rice;
  • 3 tomatoes;
  • half carrot;
  • 1 onion;
  • 3 cloves of garlic;
  • 20 g greenery;
  • 5 tsp. apple cider vinegar;
  • 5 tbsp. l vegetable oil;
  • 1 tsp. coriander;
  • 5 tsp. hot pepper;
  • 3 pcs. peppercorns;
  • salt (to taste).

Cooking time - 90 minutes. Calories per 100 g - 39 kcal.

Cooking method:

  1. Wash and clean the lamb, cut into pieces with ribs.
  2. Peel the onions and cut into rings.
  3. Wash and chop the greens.
  4. Crush and mix salt, black pepper, red pepper and coriander.
  5. Pour vegetable oil into a pan, put lamb ribs and fry for about 10 minutes.
  6. Pour the lamb with vinegar, add the onions and the prepared spices. Fry for about 2-3 minutes.
  7. To blanch the tomatoes, remove the peel and chop finely.
  8. Put the tomatoes and greens in a saucepan filled with water and simmer with the meat under the lid closed for 60 minutes.
  9. An hour later, pour the rice cereal and cook until soft rice.
  10. Ready soup insist 15 minutes.

Soup kharcho with tomatoes in a slow cooker

Ingredients:

  • 300 grams of beef;
  • 5 onions;
  • 3 tomatoes;
  • 1 tsp. tomato paste;
  • 100 grams of rice cereal;
  • 1 tbsp. l vegetable oil;
  • 1 l of water;
  • bunch of greens;
  • 1 tsp. hop-suneli condiments;
  • 1 bay leaf;
  • 1 clove of garlic;
  • salt (to taste);
  • chili pepper (to taste).

Cooking time - 80 minutes. Calories per 100 g - 62 kcal.

Cooking method:

  1. Meat wash and cut into small squares.
  2. In the bowl multicooker pour sunflower oil and place the meat.
  3. To blanch the tomatoes, remove the peel and cut into portioned cubes. Transfer to beef.
  4. Cook the ingredients with the lid closed in the Stew / Quench mode for 60 minutes.
  5. Peel and chop the onion.
  6. Wash rice.
  7. After 60 minutes, stir in stewed ingredients, tomato paste, onion and rice. Cover with water and cook under the lid in the "Soup" mode for 15 minutes.
  8. After cooking, sprinkle with chopped herbs and garlic, seasonings and spices (spice lovers can also use chili pepper).
  9. Let rest 5 minutes. Kharcho is ready!

Real Georgian kharcho with tkemali and nuts

Ingredients:

  • 350 grams of beef;
  • 70-80 grams of rice;
  • 1 carrot;
  • 1-2 onions;
  • 7-8 cloves of garlic;
  • 125 ml of tkemali sauce;
  • 70 grams of walnuts;
  • 1.5 liters of water;
  • bunch of greens;
  • hop-suneli seasoning (to taste);
  • salt (to taste);
  • black pepper (to taste);
  • red pepper (to taste).

Cooking time - 200 minutes. Calories per 100 g - 188 kcal.

Cooking method:

  1. Put the whole beef in a saucepan, add water and bring to a boil. Cook for about 2 hours.
  2. Remove cooked beef from the pan, cut portions and return to the boiling liquid.
  3. Peel the onion and cut into half rings.
  4. Peel the carrots and cut into cubes.
  5. Add boiled potatoes to boiling soup and cook for 5 minutes.
  6. Pour the carrots and cook for 10 minutes.
  7. Add the onions, cover the pan and cook on low heat for 30 minutes.
  8. Half an hour later, fill the rice and continue cooking for 10 minutes.
  9. Peel the nuts and carefully crush.
  10. Peel and chop the herbs and garlic.
  11. After 10 minutes, add the garlic and nuts. Continue cooking for 15 minutes.
  12. Sprinkle with spices to taste and cook for 5 minutes.
  13. In a boiled kharcho, chop up the greens and allow to sweat for 5 minutes. The dish is ready!

Chicken Kharcho Soup

Ingredients:

  • 2 slices of chicken fillet;
  • 100 grams of rice cereal;
  • 100 ml tkemali;
  • 1 onion;
  • 2 cloves of garlic;
  • 60 g of tomato paste;
  • 3 liters of water;
  • bunch of greens;
  • hop-suneli seasoning (to taste);
  • salt (to taste);
  • black pepper (to taste);
  • hot pepper (to taste).

Cooking time - 45 min. Calories per 100 g - 27 kcal.

Cooking method:

  1. Wash chicken fillet and cut into medium-sized slices.
  2. Put the bird in a saucepan with water, salt and bring to a boil. Boil for about 15 minutes.
  3. Rinse the rice thoroughly.
  4. Peel the onions and cut into small cubes.
  5. Pour rice cereal and onions into the pan and continue cooking for 20 minutes.
  6. Peel and chop the garlic.
  7. At the end of 20 minutes add tkemali, garlic, tomato paste and seasonings to your own taste. Boil for 10 minutes.
  8. Add the finely chopped greens to the cooked kharcho and let it sit for about 5 minutes. The dish is ready!

Spicy meatless kharcho

Ingredients:

  • 75 grams of rice cereal;
  • 1 onion;
  • 3 tomatoes;
  • 3 cloves of garlic;
  • 1 tbsp. l butter;
  • 10 black peppercorns;
  • 5 tsp. red pepper;
  • 1 l of water;
  • salt (to taste);
  • hop-suneli seasoning (to taste);
  • greens (to taste).

Cooking time - 50 minutes. Calories per 100 g of the product - 42 kcal.

Cooking method:

  1. Thoroughly wash the rice cereal.
  2. Peel the garlic and onions and finely chop the vegetables.
  3. Fill the pot with water and add rice, garlic, onion and pepper-peas. Bring to a boil and cook for 15 minutes.
  4. To blanch tomatoes, peel and cut into small cubes.
  5. Heat the butter in a frying pan, add the tomatoes and fry over high heat for 3 minutes.
  6. Then reduce the heat, cover the pan with the lid and simmer the tomatoes for 7 minutes.
  7. Put the tomatoes in a pot of boiling soup, add red pepper, as well as other seasonings to your own taste. Boil for 5 minutes.
  8. Put chopped greens into ready-made kharcho, cover with a lid and let it brew. Enjoy your meal!

Culinary Tricks

  1. Cooking kharcho takes several hours, so for cooking a tasty soup you should not neglect time.
  2. Traditionally for kharcho fatty meat is used - so the soup will be more satisfying and rich.
  3. Round rice is ideal for kharcho: it gives a greater fat to the dish.
  4. When cooking kharcho with nuts, the soup turns out to be tastier if the nuts are pre-roasted in a pan: this way more flavor will stand out.
  5. The best greens for kharcho will be parsley or cilantro. For a more refined taste, you can try peppermint.
  6. There is another, simpler way to remove the peel from a tomato: you just need to put the cut vegetables in a plastic container, cover with a lid and send in a microwave for 1-2 minutes. Tomatoes are well steamed and the skin can be easily removed.
