  • 20 grams of sugar;
  • 2 pinches of freshly ground black pepper;
  • to taste the salt.

Required: 1 hour 55 minutes. Each serving: 350 kcal.

Cooking:

  1. Wash chicken, dry with paper towels.
  2. Heat 20 g of butter and 40 ml of vegetable oil in a saucepan with a thick bottom, brown the bird on all sides and remove from the pan.
  3. Shallots to peel, chop into small rings, send to the pan (where the chicken was fried), add olive oil, a little rosemary (leaves with 2 sprigs), black pepper, salt.
  4. Fry onion until cream color.
  5. Return the bird's carcass to the pan, add cider, close the lid, simmer for 60 minutes on very low heat, turning once.
  6. Peel the apples, cut the core, chop into slices.
  7. In a skillet, heat the rest of the butter with the sugar, put the apples out, stand on the stove slices until they are covered with a beautiful caramel crust.
  8. When the meat is ready, put the apples into the pan, stew for another 5 minutes, sprinkle with the remaining rosemary. Cool a little chicken, then chop into slices and serve with apples.

To the note: do not worry if the apples are very brown - the taste of the caramel will be even brighter, and the chicken will especially like it.

How to cook:

  1. Preheat oven to 150ºC. Cut a piece of fish in half, season with salt, ground pepper.
  2. Rinse the mushrooms thoroughly, chop, then put into the pan, close the lid and send on medium heat. After 2 minutes, shake the pan so that the mushrooms do not stick to the bottom. Five minutes to remove the cover and drain the water, it must be left.
  3. Add butter to the mushrooms, add heat and fry for 5 minutes. Sprinkle with flour, fry for a couple more minutes, stirring.
  4. Pour the water released by the mushrooms during frying. When the liquid thickens, add cream, mix well and bring the cream sauce to a boil, season to taste, remove from heat.
  5. Prepare two pieces of parchment (approximately 30 × 40 cm). In the center of each sheet, put the fillet, sauce on it with mushrooms. Raise the edges of the parchment over the salmon, combine and wrap 3 times.
  6. After that, twist the open ends of the parchment (looks like candy). Bake fish in the oven for about 12 minutes.

Pike stuffed whole

Stuffed pike perfectly complements the New Year's table, besides it is served not only hot, but also cold.

Ingredients:

  • 1 pike carcass (weight - 1.5 kg);
  • 3-4 sprigs of dill;
  • to taste vegetable oil;
  • 1 bunch green onions + parsley;
  • 400 g of yesterday's white bread;
  • 2 eggs;
  • 5 cloves of garlic;
  • some milk;
  • salt to taste;
  • 1 handful of pitted olives.

Required: 2.5 hours. Each serving: 326 kcal.

How to cook:

  1. Rinse the pike well, remove the scales. Scissors cut from the head of the gills. From two sides along the gill slits make an incision. The skin that connects the head of the pike with the back remains intact.
  2. Bend the pike head back and separate the skin from the pulp using a small, sharp knife.
  3. Scissors cut fins from the inside. Peeled fillets cut off before reaching the tail section of 2 cm. The pike skin with head, fins and tail should remain. It must be straightened until postponed.
  4. Remove entrails, ridge and ribs from the carcass. Rinse the pulp, chop into pieces, removing small bones.
  5. From a loaf to cut off a crust, to fill a crumb with milk. Put in the blender container pieces of pulp, a slightly squeezed loaf, egg, grind everything.

  • 1 pike;

  • to taste garlic;
  • 200 g cream and sour cream;
  • 150 ml of white wine;
