How to cook cottage cheese cheesecake at home

To create cottage cheese cheesecake, it is customary to take cream cheese, which is sold in small packages. This complicates the process of cooking for the whole family, so the hostesses, having worked on the dessert recipe, began to replace the cheese with cottage cheese.

Dessert history

Many lovers of cottage cheese cheesecake believe that it was created in Europe or America, where it gained the most popularity. But the recipe for this mild and tender, hearty and airy dessert, in fact, is mentioned in ancient manuscripts of the Greek physician Aegimius 800 years before the beginning of our era.

In those old times, this dish looked like cheesecake, which guests were treated to, honored the winners of the Olympic Games in Greece. Gradually, the old-time pie began to appear in the homes of noble people of ancient Rome. Then the dish passed into the European colonies of Rome and was delayed for a long time in England, where there were conditions and necessary ingredients for its preparation.

There is another opinion - the cheesecake got to the European countries with the Crusaders from the Middle East, where in ancient writings there is also a mention of a dish with cottage cheese, honey, eggs. But in ancient Russia, from the chronicles of the 13th century, it can be seen that the loaf with cheese was prepared before the crusader campaigns.

In each country, the ancient recipes for cheesecakes were prepared differently, but the modern recipe of this dish, which is used now, was already done in the early 20th century thanks to a new D. Kraft pasteurization method.

Curd cheesecake at home: a traditional recipe

In the kitchen at home you can cook a huge amount of desserts for any holiday. Cheesecake cheesecake just started to gain popularity - its preparation is simply considered to be an expensive, difficult and lengthy process. But once you try to work on the creation of this dish and the view will change dramatically.

The following ingredients are required for cooking:

  • Cookies (crumbly) - 250 g;
  • Butter - 100 g;
  • Cottage cheese - 0.6 kg;
  • Sour cream - 100 g
  • Egg - 3 pcs .;
  • Sugar - 6 tbsp. L .;
  • Lemon peel - 1 pc .;
  • Vanillin.

Cooking time cheesecake will be a couple of hours, and nutritional value - 260 kcal. The stages of cooking this treat at home:

  1. Pour the cookies into a deep bowl and crush them until the flour state is formed. This process can also be carried out using a grater, a blender;
  2. The butter must be melted to room temperature, add to the liver and mix to obtain a plastic mass;
  3. Put the baking paper in the form. Approach the choice of the form responsibly - it must be deep with an even bottom and walls. Mass of the cookies gently lay out and smear around the perimeter of the bottom and a couple of centimeters on the wall. Then put in the refrigerator so that the butter and cookies froze;
  4. Beat the sugar and eggs until the grains are completely dissolved;
  5. Cottage cheese grind using a sieve (or using a blender, combine) to the consistency of the cream. Pour sour cream, add vanillin and mix thoroughly again;
  6. Grate the lemon zest or crush with garlic crush;
  7. Cottage cheese and egg masses combine, add zest. All must be thoroughly whipped - until complete homogeneity;
  8. In the form of cookies pour the resulting cream. It is necessary to put the form in the oven on a deep pan with poured water - this will create a water bath that will not allow the future cheesecake to crack. Heat the oven to 180º and bake for 60-80 minutes.

You can notice the readiness of the dessert by the uniform lemon color, density (it can slightly sway in the middle). After cooling, the cheesecake is put in a cold place for 5-6 hours (preferably for a day). At the end of this time - gently get cottage cheese dessert on a plate with paper, which is carefully cut off.

Cheesecakes can be decorated with grated chocolate, fresh fruit, sweet berry sauce.

  • Cottage cheese - 600 g;
  • Sour cream (fat content over 20%) - 150 g;
  • Eggs - 6 pcs .;
  • Chocolate (milk, not bitter) - 150 g;
  • Butter - 100 g;
  • Sugar - 250 g;
  • Flour - 150 g;
  • Vanillin.

To create this treat, it will take about 80 minutes of time, but for a natural cooling of a dish taken out of the oven from 6 to 10 hours. High-calorie cheesecake is high - 320 kcal per 100 g of product - but it’s not every day that you cook and enjoy such a wonderful dish.

First you need to melt the chocolate and butter in a water bath. Beat three eggs with half a glass of sugar (until it is completely dissolved), add chocolate mass, half the prepared flour and stirring to achieve homogeneity. Preparation of all ingredients for cheesecake is long and painstaking, but the creation of a culinary masterpiece will delight with its unique light and mild flavor, if a:

  • Crush cookies to a very fine crumb, and knead cottage cheese to a state of cream with a sieve and blender;
  • Choose a cottage cheese not only fresh but also fatty - this will give the cheesecake a perfect taste;
  • After baking, you should not get the dessert immediately - it is better to leave it to cool first in the oven, and then at natural room temperature, so that no cracks form on the surface of the dish;
  • Using additional fruit, berry sauces for the filling - it is necessary to grind them finely in a blender, a food processor.

The longer the untouched cottage cheese cheesecake cools, the easier it is then chopped to serve. And let the cooking process at home takes a long time, they will not only want to try it, but they will definitely ask your guests, relatives and friends to re-cook.
