Simple recipes for making sponge cake at home

Sponge cake, depending on the number of eggs, flour, granulated sugar and various additives, can be turned into completely different desserts. You can add cocoa, semolina, kefir, honey, and in any case it turns out delicious.

Classic recipe

It is easy to bake a classic sponge cake, but there are still some mistakes. The most common mistake is badly beaten eggs. Of course, the dough will rise in the oven, but when you get it, all this "beauty will fall."

 

Be aware that well-beaten eggs should be structured like a men's shaving foam.

To make a dessert, you will need:

  • 4 eggs;
  • 100 g of flour;
  • a bag (100 g) of powdered sugar;
  • dark chocolate bar;
  • 500 g sour cream;
  • 100 g of sugar.

Active cooking time: 1.5 hours. A serving of cake contains: 410 kcal.

Cooking a classic sponge cake at home:

  1. Pound eggs with sugar, send to the water bath. Mix the preheated mixture thoroughly with a mixer for ten minutes. Do not shorten the whipping time;
  2. In the lush egg mass, mix in the prepared flour, but do not send everything at once, but pour in slowly and in small portions. Put the mixer aside, it will not work for this operation. Take the silicone spatula and in a circular motion begin to stir the flour. Work slowly, but not for very long;
  3. Carefully transfer the sponge mass to the silicone mold. If you use other forms, do not forget to lubricate them;
  4. Preheat the oven to 180ºC and send a biscuit there for half an hour;
  5. As a result of simple manipulations, you get the most common classic sponge cake;
  6. Biscuit base for the cake, leave on the table for eight hours, then carefully cut into 3 pieces;
  7. Prepare the cream: beat the mixer with chilled sour cream with powdered sugar until a thick but fluffy mass is obtained;

  9. Grate the chocolate on a fine grater and just sprinkle the cake. So that it is well soaked, keep it at room temperature for at least 2 hours.

Honey sponge cake bake in your own kitchen

To make a honey sponge cake, replace plain sugar with natural honey.

What is needed:

  • 5 eggs;
  • flour + honey - for ½ part of article;
  • vanilla - to taste;
  • 200 g of sugar;
  • 500 grams of sour cream;
  • a glass of shelled walnuts.

For active cooking will take: 1 hour 30 minutes. Caloric content of 100 g: 415 kcal.

Cooking:

  1. Whisk the egg yolks separately. Heat the honey and add it to the yolk mixture. Pour gently with constant stirring;
  2. Beat the whites until a persistent foam appears, then mix with the honey mixture, add flour, salt, vanilla and mix with a spatula. To avoid spoiling the dough, mix slowly, preferably in a circular motion;
  3. Put the biscuit dough in any shape you have, do not lubricate the silicone, and grease other types of forms with butter. The form must be filled with dough not to the brim, in the baking process it will rise;
  4. Send the form to a hot oven. Do not open it for half an hour, otherwise the biscuit will “fall off”;
  5. Leave the ready base for the cake at eight o'clock;
  6. Cool sour cream, then using a mixer, whisk it with sugar. The mass should get thick. Add chopped walnuts to it and mix gently. Leave some nuts for sprinkling;
  7. Cut the cooled biscuit into 3 equal parts, soak each cream. Collect the cake and coat with cream on all sides, sprinkle with chopped nuts on top;
  8. To make the dessert well soaked, he needs to stand on the table for at least 2 hours, then send him to the fridge.

A simple recipe for dessert with cocoa and semolina

Cocoa, semolina and vanillin can be added to the classic biscuit dough - it will also be tasty and quite inexpensive.

Products for sponge cake:

  • 5 large eggs;
  • cocoa - 1 tablespoon;
  • baking powder - half tea;
  • semolina + wheat flour - 100 grams;
  • 150 g sugar + 20 g butter "traditional".

Products for chocolate cream:

  • ¼ packs of oil;
  • white sugar powder - handful;
  • chocolate;
  • egg;
  • Cognac - 1 tablespoon;
  • vanilla - at its discretion.

How to make a sponge cake with semolina and cocoa at home:

  1. Spread 5 eggs with sugar, put in a water bath. Slightly stir up the slightly heated mass using a mixer; 10 minutes is enough;
  2. In the egg mixture, add flour, semolina, cocoa, baking powder. The main thing is not to pour everything at once. Add in small portions, gradually. Stir the mixture with a spatula, preferably silicone;
  3. Divide the biscuit mass into three "piles", one mix with softened butter;
  4. Combine the "butter" and the usual dough, mix;
  5. Transfer the base of the cake to the silicone mold, filling only half the volume;
  6. Preheat the oven to 180ºC and put the cake to bake. 30 minutes is enough;
  7. Sponge cake cool for 7 hours. Then cut it into 2 parts and layer it with cream;
  8. To make the cream, carefully beat the butter, powder, egg, vanilla, hot chocolate and cognac.

The recipe for a delicious sponge cake on yogurt with fruit

If you decide to bake a fruit cake for a holiday, then do it in advance, so that the filling is frozen well.

You will need:

  • 100 ml of kefir;
  • 0.2 kg of sugar + three eggs;
  • 0.2 kg of bread flour.

Products for cream "cottage cheese":

  • 0.5 kg of 9% cottage cheese;
  • 0.2 kg of sugar;
  • half a pack of oil;
  • package (20 g) of gelatin;
  • handful of walnut;
  • package of jelly semi-finished product;
  • Kiwi, banana or tangerines - optional.

Preparation takes: 90 min. One portion: 548 kcal.

How to make such a cake at home:

  1. Grind eggs with sugar until white, pour kefir, salt, pour flour, knead everything well;
  2. Put the mixture into a form with detachable walls and send it for 25 minutes. in a hot oven (180ºC);
  3. Prepare the filling: cottage cheese, sugar, butter, thoroughly grind. Gelatin pour water when it swells, put on fire and, without boiling, dissolve. After cooling down, pour into the curd mixture. Add nuts and mix everything;
  4. Put the ready stuffing on the sponge cake. From above spread out the circles of kiwi, banana, slices of mandarin, pour jelly mass, prepared from a semi-finished product;

Biscuit Cake

Instead of the usual biscuit, you can make a baked biscuit cake with sour cream. But do not retreat too much from the recipe, so as not to spoil the pastries.

You will need:

  • 0.3 kg flour;
  • 250 ml of water;
  • 125 grams of butter "traditional";
  • a pinch of salt;
  • 8 eggs

For cream "sour":

  • a jar (200 g) sour cream;
  • 3 tbsp. Sahara;
  • 6 g of gelatin;
  • rum (optional) - 40 ml.

To decorate:

  • powdered sugar;
  • a handful of almonds.

Preparation takes: 80 min. Portion of cake: 490 kcal.

Step-by-step recipe:
